Banana Bread

Who doesn’t love a good banana bread? This recipe is sure to impress, thanks in part to the subtle toasty, sweetness provided by the barley flour. But don’t limit yourself, feel free to experiment with our spelt, triticale or bread flours to see how delicious they all can be in this recipe.

  1. 1 3/4 cups barley flour
  2. 2 tsp baking powder
  3. 1/4 tstp baking soda
  4. 2/3 cup of sugar
  5. 1/2 tsp salt
  6. 6 Tbsp vegetable oil
  7. 2 eggs, well beaten
  8. 1 cup mashed, ripe bananas (about 2)
  1. Combine flour, powder, soda, sugar, and salt in one bowl.
  2. Combine oil and eggs in another bowl.
  3. Add dry ingredients to the oil mixture, alternating with bananas. Mix until just combined.
  4. Bake in a well greased 8 1/2 x 4 x 3 pan at 350 degrees for 1 hour and 10 minutes.
  5. Let rest in pan for a few minutes, then remove to wire rack.
