Barley flour has a distinctively nutty flavor and most closely resembles a cake flour. My favorite use for it is pancakes (delicious!) and it also works beautifully in quick breads, and cakes (it creates cakes that are light and airy with enough strength to decorate or stack into two or three layers). Offered as a bolted/sifted flour only.
