I LOVE pancakes and for me the simpler the recipe, the better.  I must admit that these are hard to resist, especially when made with our barley flour. The flour lends itself to a natural toasty/nutty flavor and the bran develops a delicate, crunchy sweetness, that even your youngest critics will enjoy. But have no fears, you can use any of our flours (at the same ratio) in this very easy recipe.

  1. 1 1/2 C barley flour
  2. 3 1/2 tsp baking powder
  3. 3/4 tsp salt
  4. 3 Tbsp sugar
  5. 1 egg, well beaten
  6. 1 C milk
  7. 3 Tbsp butter or shortening, melted
  1. In a bowl, blend together dry ingredients.
  2. In a separate bowl, thoroughly combine wet ingredients.
  3. Add wet ingredients to dry and mix until just combined. Batter may be thinner than you're used to.
  4. Bake on hot griddle until golden brown; if you used barley flour, the pancakes may be more delicate than traditional wheat pancakes.
  1. Any of our flours may be substituted in this recipe at a 1:1 ratio.
